Allow run and simulate_operations to output operations with attestation kind through RPC versioning

Context

This MR allow the run_operation and simulate_operation RPCs to output endorsement and attestation kind in the JSON formatted output operation using a version argument in the RPC call.

This MR fixes #5763 (closed)

Manually testing the MR

Run the following commands:

dune exec tezt/tests/main.exe -- --file rpc_versioning_attestation.ml simulate;
dune exec tezt/tests/main.exe -- --file rpc_versioning_attestation.ml run;
