Revert "Merge branch 'fix/2998_mc-policy-set' into 'master'"

What does this MR do?

Revert !2810 (merged) change, due to findings in !2811 (comment 1136842614)

This will re-open #2998, as it needs to be addressed after an update to the minio/mc container that includes the syntax change.
