Allow preapply_operations to output operations with attestation kind through RPC versioning

Context

This MR allow the preapply/operations RPC to input and output both endorsement and attestation kind in the JSON formatted output operation using a version argument in the RPC call.

This MR fixes #5383 (closed)

Manually testing the MR

Run the following command containing the newly added tests:

dune exec tezt/tests/main.exe -- --file rpc_versioning_attestation.ml preapply;
