Update Elasticsearch version to 8.5.3

Upgrade Elasticsearch to 8.5.3 for nightly builds

I was in the middle of upgrading our production cluster to 8.5.2 when the version available for upgrade in ElasticCloud was changed to 8.5.3. So we need to do all of the prep work steps again
