Elasticsearch upgrade steps

These are the cross functional steps that are needed when Elastic releases a new version.

Infrastructure

• Open an Infrastructure Change Management Request following the steps outlined in the Elasticsearch runbook -> gitlab-com/gl-infra/production#8109 (closed)

Development

• Upgrade the version of Elasticsearch in CI -> gitlab-org/gitlab!105373 (merged) (8.5.2) and gitlab-org/gitlab!106485 (merged) (8.5.3)
• Upgrade or add the new version of Elasticsearch in gitlab-elasticsearch-indexer CI -> gitlab-org/gitlab-elasticsearch-indexer!169 (merged) (8.5.2) and gitlab-org/gitlab-elasticsearch-indexer!170 (merged) (8.5.3)
• Update gdk Elasticsearch version -> gitlab-org/gitlab-development-kit!2848 (merged) (8.5.2) and gitlab-org/gitlab-development-kit!2878 (merged) (8.5.3)
• Update SystemCheck::App::SearchCheck methods (if applicable) -> not applicable version check currently checks for 7 and 8

Quality Assurance

• Upgrade the version of Elasticsearch used in gitlab-qa nightly builds -> gitlab-org/quality/pipeline-common!251 (merged) (8.5.2) and gitlab-org/quality/pipeline-common!252 (merged) (8.5.3)

Communication

• Update admin documentation with changes (as needed) -> not applicable documentation already references version 8.X
• Add deprecation notice (as needed) -> not applicable
