Revert Knative version check

In order to address gitlab#55246 (closed) and gitlab#118431 (closed), we have reverted the code that adds the k8s role binding necessary to get the Knative version in gitlab!22560 (merged).

This MR reverts the code changes that use the role binding to get the Knative version.
