Added tracking to the different diff view settings [RUN ALL RSPEC] [RUN AS-IF-FOSS]

What does this MR do?

Adds tracking to the different diff view settings for when they are changed. These settings also get tracked on page load so that we can track users initial diff settings before any get changed.
