Update Workhorse Gitaly client dependency

What does this MR do and why?

In gitaly!7753 (merged) (merged), Gitaly updated go-grpc to 1.71.1 to fix some issues (e.g. gitlab-com/request-for-help#2604 and gitlab-com/request-for-help#2599).

Workhorse as a client using gitalyclient package should also be updated to take that changes. This MR works on updating gitalyclient package master.
