ci: Save more artifacts for foss-impact jobs

What does this MR do and why?

Since we didn't save artifacts from knapsack/, we'd get a lot of spec/path/to/spec/file_spec.rb missing from the expected Knapsack report, skipping. warnings in the job logs, flooding the page, e.g. https://gitlab.com/gitlab-org/gitlab/-/jobs/6150421608.

This makes sure we save the same artifacts as any other RSpec jobs for the foss-impact jobs.
