What does this MR do and why?

Upgrades to the latest version of the GraphQL gem

• https://my.diffend.io/gems/graphql/2.0.27/2.2.5 (We can't upgrade to latest due to some odd failures related to error handling. So I've decided to just upgrade to this version for now.)
• https://my.diffend.io/gems/graphlient/0.5.0/0.6.0 (We can't upgrade to latest due to #408884 (closed))
• https://my.diffend.io/gems/graphql-client/0.18.0/0.19.0
