What does this MR do?

This update modifies the supported configurations table in the documentation. It changes the architecture specifications from "x64" to "x86-64" and from "ARM" to "Arm64".

These changes provide more precise and standardized terminology for the supported processor architectures across different cloud providers and services and are aligned with the naming we use in https://docs.gitlab.com/ee/ci/runners/hosted_runners/linux.html.
