Fix API docs around unauthenticated projects return fields

What does this MR do?

Documents existing API behaviour around unauthenticated use when listing projects.

Why was this MR needed?

It seems the API effectively hardcodes simple=true when the API user is not authenticated and this behaviour is not documented.
