Update step in docs release template

Achilleas Pipinellis requested to merge axil-update-release-template into main

A step of the docs release was outdated after the changes of !3634 (merged).

We must not cancel the 'Build Docker images manually' pipeline as the image:docs-latest job won't be able to run (needs the test first to pass).
