Remove Gitaly's redundant Prometheus listen address configuration

What does this MR do?

Removes Gitaly's redundant Prometheus listen address setting, as it is already configured in _configmap_spec.yaml.

For added context: !2100 (merged) updated the setting in _configmap_spec.yaml to properly bind to 0.0.0.0 instead of localhost.
