Update category page interfaces

Phil Calder requested to merge categories-page-interfaces into main

Why is this change being made?

@tristan.read pointed out - and documented in Links on ~/handbook/product/categories/#interfa... (#186 - closed) - that many of the links in https://handbook.gitlab.com/handbook/product/categories/#interfaces are broken.

Most of these look like they were ported directly from www-gitlab-com and can be updated to point back to https://about.gitlab.com/
