Update High Velocity SA page: AMER only coverage

The High Velocity SA team now only covers AMER. This MR removes all EMEA references from the handbook page.

Changes made:

  • Updated the Structure section to reflect AMER-only coverage
  • Updated the SA Request Triage Process to reference AMER team only
  • Removed the EMEA Slack support channel (#sa-commercial-emea-support)
  • Renamed "Regional Team Meeting (EMEA or AMER)" to "Regional Team Meeting (AMER)" and removed the EMEA meeting details
  • Removed the "Weekly Standups (EMEA)" section
  • Removed the COMM EMEA SA Dashboard link from Team Links
