Ub1 980 debian bookworm port

Updated .gitlab-ci.yml to include build / test for Debian 11, Debian 12, and Centos 8 (RHEL 8) to verify compatibility with different environments.

Since this is only gitlab related changes, no new deployment / version number is necessary.
