[Version-unspecific] Readme edit for regression testing: Cosmos Coin fields for tx-send

As described here, a minor edit for the regression testing Readme to accurately depict tx-send usage,
as MsgSend uses a Cosmos Coin format with 'denom' and 'amount' fields,
rather than a THORChain Coin format with 'asset' and 'amount' fields.
