Release 1.116.0 / Update Tag to Mainnet

Sounds like there is desire to re-attempt launching BSC - this will remain in draft until a new snapshot (https://github.com/bnb-chain/bsc-snapshots). This includes an increase of the BSC volume size to 6T, which should be sufficient to prevent nodes needing to reset or prune for 6 months.

This also updates references chaosnet-multichain -> mainnet. We should include a note of this in the release in case operators have local overrides on the old chaosnet.yaml values.
