Switch to ON_DEMAND, as spot instances can get removed without warning

No idea why this setting as been put in or why others haven't seen issues with it. Having this as SPOT means you get ERC2 spot instances that can be removed and taken back by AWS at any moment without warning. Just setup a new cluster with this only to have all the EC2 nodes removed by AWS the next day and the whole cluster is now down.
