Doc: use level instead of height in glossary (follow-up from "Doc: adapt to Ithaca")
The glossary uses "height" consistently instead of "level", which is however the default Tezos term. Since only the glossary uses height, I think for consistency with the rest of the doc, we could use "level" and add references to its definition.
