Remove hidapi custom apk
We don't need to pack a custom hidapi APK to get both shared and static libraries anymore with Alpine 3.17+
We will also be able to archive https://gitlab.com/nomadic-labs/hidapi-apk, merge nomadic-labs/hidapi-apk!3 (merged) first.
Let's simplify the docker image build and remove the extra scripts => less maintenance and reduced complexity.
