Now we have a stub generator, we can refactor the existing setup to use
this multi-file approach, resulting in a more easily scannable view of
what parsers are supported, and reducing onboarding.

This moves the `renovateParsers` variable to `renovate_parsers.go` as it
makes more sense there.
