CI: update macOS images + pixi conf

  • macos-14-xcode-15 image for GitLab Runner not available anymore (see job error): update to newer image
  • remove deprecated pixi [system-requirements]. Virtual packages can be declared in platforms but those values are old and shouldn't be needed anymore.
