Longhorn 104.1.0+up1.6.2 with 1.6.3 images

There currently isn't yet a Longhorn Rancher chart for Longhorn 1.6.3.

This MR moves to:

• use 104.1.0+up1.6.2 (to use a 104.x chart which is what is supposedly better with Rancher 2.9.x)
• use 1.6.3 images

The target for Sylva 1.2 should ideally be to use a chart officially advertising support for 1.6.3, but given the few difference in upstream charts between 1.6.2 and 1.6.3, it does not seem that a chart more recent than 1.6.2 would be required to use Longhorn 1.6.3.
