WOM-300: Add migration guide for v1.0.0

As we want to get the migration guide out to teams as soon as possible I have split it out into a separate MR. There are a couple of TODO's to add links to documents we need to write and also to update the "Changes to LRC results" section depending on the outcome of WOM-343. I have added comments to the appropriate tickets so we don't forget.
