ORC-1873 update pointing

This MR updates the pointing notebook(s) to work with the latest SDP and fix some imports that were previously updated in Adam's previous MR which I haven't fixed on that. It also updates the sb definition used by jupyter_notebook_for_mid_imaging_scenario_5_point_sb.ipynb to match what SDP does at the moment.

The mid_five_point_calibration_scan.ipynb notebook is tested and works. The other I couldn't test because I couldn't get past turning the telescope On (see my message in the proj-jupyter-scripting channel).

I've also introduced a 4th dish in preparation when we'll be using real data for pointing. These data sets are set up for 4 dishes.
