AST-1521: structurize main documentation page

I propose to improve the structurization of our main documentation page as in this MR. This should make browsing through the documentation much more insightful, without getting lost. I was inspired by the Mid pipeline in this.

The index.rst file is effectively fully changed. It adopts the structure of the Mid pipeline repo, but I noticed other workflow repos have a similar structure.
