Document updated configuration format

A Frederick Christensen requested to merge fauxmight/goimapnotify:documentation-fix into 2.3.x

The existing configuration format documented in README.md generates a "Legacy configuration format detected" warning. It does not appear that the desired documentation format from commit f09f4b93 (3 November, 2021) is documented elsewhere.
