[CI] Update image to 3.11.1

Patrick Dupuis requested to merge ci/update-3.11.1 into develop

This MR updates SATIE's CI image to metalabsat/supercollider:3.11.1 which in addition to increasing the SuperCollider version, also is based on Ubuntu 20.04.
