docs: Replace stale GitHub references with GitLab

The Roku developer repositories moved from GitHub to GitLab, but several docs still describe them as being on GitHub (e.g. the README opens with "Welcome to the official GitHub repository").

This updates the 9 stale self-references so they say GitLab instead (the link targets already point to gitlab.com):

  • README.md
  • docs/VIDEOS/courses/rsg/index.md
  • docs/DEVELOPER/getting-started/index.md
  • docs/DEVELOPER/getting-started/samples.md (front matter, intro, table header)
  • docs/DEVELOPER/media-playback/trick-mode/hls-and-dash.md

Legitimate references to GitHub-hosted third-party projects (rokucommunity, Selenium, astc-encoder, etc.), GitHub Copilot, and the intentional migration note in the SDK overview are left unchanged.

Created by a Sourcegraph agentic batch change.
