Build options to select sound backends

• The default is the old behaviour, supporting both ALSA and PulseAudio
• USE_SOUND_ALSA=1 and/or USE_SOUND_PULSE=1 select the desired backend(s)
• USE_SOUND_NONE=1 builds without a sound backend
