Restore CI Verdancy

Restore the CI; rework the testing containers as per @berrange's suggestion.

Dan: This works, but I still need to update the build/docs containers jobs to get off of the old "Python" container which does too much. Sending MR now just because I wanted to get the CI green for our friend ASAP.

I also think the yaml files look suspiciously repetitive, but I'm not quite so great at gitlab-yaml-fu, so if there are chances to refactor and make things less repetitive, please advise and I'll happily implement it.
