community/device-pine64-pinephonepro: add simple-card.conf link to PINE64-PinePhonePro-.conf

It seems that for some people a link named PINE64-PinePhonePro-.conf works well but for me and som other people it does not.

Adding a link named simple-card.conf does the deed. I did not experience and issue having both links on my device.

Martijn: The default platform description for SMBIOS in U-Boot is "Unknown Product" which gets mangled by alsa into this.
