main/postmarketos-ui-phosh: fix pipewire startup

Override pipewire.desktop with a different X-GNOME-Autostart-Phase, so Phosh can start it properly.

As discussed, this is the workaround for #963 (closed) until it's changed upstream in Alpine / in pipewire (needs further discussion).

I verified that this works as expected on the pinephone.
