refactor: Make spanwise statistics generic

Summary

This will allow easier expansion of the spanwise turbulence statistics to other quantities (such as CFL and Peclet number).

Other things change:

  • Use TSMonitorSetFromOptions for the spanstats setup
  • Create a honee.h file so that the Honee object can be referenced without dragging in the full navierstokes.h
