[BB-819] Update handbook with mentor 121 checklist

This adds a few interview questions for the first 121 between mentor and newcomer.

Also includes a few other improvements mentioned in the ticket:

• Move newcomer friendly tasks.
• Add links to INCR and Byte-Size tasks.
• Instruct mentor to assign a task before the newcomer first sprint.
