[SE-2582] Onboarding rework: Encourage actions with quizzes

Author notes and concerns:

  1. At this moment, the "Show Answers" button shows up after a single attempt on the problem. However, we can disable the "Show Answers" button. What do you think @swalladge ?
  2. I made the Point Estimates problem an Open Response Assessment because it was easier that way, thoughts on that too please?
