[#536] Disable 007 tests

Description

Note: this MR targets the edo branch.

Since the edo branch contains edo-specific changes, and may contain tests that will fail when run against older protocols, we should disable testing against older protocols.

As such, this MR disables the 007 tests, and addresses a couple of items described in #536 (closed).
