Update the Postgres loader configuration section in the MeltanoData Guide

In the Configure PostgreSQL loader in meltano.yml section of the MeltanoData Guide, we set the host in the meltano.yml

This MR also adds the username/password/port/database for target-postgres in meltano.yml --> That way if someone goes and changes those (let's say by mistake) the Pipelines will not be affected.
