Created 4 categories for the documentations :

Deleted/re-formated previous tutorials

Removed some information from the main page + added a line to explain the new structure of the documentation

Note : most new page are still empty (e.g. the code philosophy pages are still to be written), this MR only concerns the structure of the doc
