The GitLab repo was named PraatDocExtractor, so, in order to
not break already extant links to it, the files were renamed
and the instances of PraatDocExtract inside were fixed in
the files as well.

Additionally, the tex file was added back in, now as a
standalone version that will actually compile with
pdfLaTeX.
