Fixes #23 Refactor model selection method, update to docker file and .gitlab-ci.yml file

Refactored code to use methods from imports rather than redirecting to endpoints. Fixed issue with .gitlab-ci.yml file - added container image version. There was an udpate to the miniconda3 container version on docker registry this week which failed the deployment of the AI model service.
