Extend Rocky Linux Profiles with Added Improvements

This MR extends the Rocky Linux profiles to include variants (standard variants + live variants), Generic Cloud images, URL's to the latest of all standard variants. This also includes additional testing data to ensure regex's are work as expected.

This commit extends the Rocky Linux profiles to include the following:

* Generic Cloud Image to the latest available image link
* Image variants
  * Three standard variants: netinst, minimal, everything
  * Live variants: Workstation, Workstation Lite, XFCE, and KDE (Rocky
    Linux 9 only)
* Variant URL's to the latest available for a given major release
* Tests to validate live ISO images with the profiles and their given
  regex
