Attempt to simplify Rocky Linux osinfo with backwards compat

Hello. This MR is similar to !489 (closed) in that it tries to simplify/reduce the amount of work required to maintain Rocky's osinfo as versions are released. This removes the "unknown" profiles and consolidates all new versions into rocky-X, while keeping previous versions still around as a "just in case"

As I wasn't sure whether this or the prior would be preferred, I've set this as draft as well and I am definitely open to comment and advisement!
