Core: Simplify callable detection

Replace the sizeof and enable_if detection idiom with the standard void_t/decltype detection pattern.

Each specialization now participates when the corresponding expression is well formed, without wrapping that expression in an artificial sizeof comparison.

This is a compile-time cleanup only. It preserves the detected expressions, fallback behavior, and runtime code.
