Improve OpenMP detection on macOS using Homebrew

This merge request improves OpenMP detection for macOS using brew --prefix to detect libomp.

Additional changes:

  • Adds a new DEP_OPENMP_INCLUDE environment variable that point to the Homebrew based include path.
  • Updated README to document changes.
