Bump `media-type` dependency
To allow for using this library with spring-web's MediaTypes, we can
bump the dependency so consumers of this library don't need to
independently manage the versions.

The 17.0 major release is coming on May 16, 2024! This version brings many exciting improvements to GitLab, but also removes some deprecated features.
