Major upgrades to Layout, Typography, Dependencies, and more

This is an important upgrade to Grey docs, as it introduces a lot of dependency upgrades, code cleanup, and netlify config fixes.

Motivation

Grey-docs was using a lot of old packages which needed to be upgraded in order for us to be able to use the latest Nuxt, Tailwind, and Netlify features.

I think it will be worth it for us to migrate all current work to start off from this branch.
