chore: improved the docs gitlab-project-protected-environment docs

Improved the docs gitlab-project-protected-environment docs by adding examples for attribute deploy_access_levels_attribute. This example was missing, while it's very important, because in the next GitLab verion the old configuration (deploy_access_levels) is removed.
